Tuesday wine sales are flat at most venues because the customer hasn’t tried anything bold enough to commit to a glass, let alone a bottle. A 30ml tasting flight removes the risk.
The offering
- Three wines, chosen by the sommelier or owner that morning.
- 30ml each. Free, on Tuesdays.
- One sheet, A5, on every table — “Tuesday tasting flight, on the house”.
What happens
Conversion to a bottle (or two glasses) on the favourite of the three is around 50–65%. The unit economics work — 90ml of wine costs you $2–$4, the average resulting sale is $35–$60. Tuesday wine revenue typically doubles.
