The mid-week bar-snack strategy that lifts dwell time and spend

Three $8 snacks. Available at the bar. No table required. Doubles average spend per cover after 9pm.

Most venues turn the kitchen off at 9pm and lose the rest of the evening’s drink revenue. A short bar-snack list rescues it.

The three-snack menu

The snack list is intentionally tiny — three items, available at the bar, prep-light, all on a single sheet:

  • Olives, almonds, salted
  • House-made pretzel, two mustards
  • Charcuterie tasting (three meats, pickle)

The economics

The kitchen is closed but the bar is open. Snacks are prepped during normal service and held. GP% is 80%+ because labour is sunk. The lift in drink revenue per cover after 9pm is the bigger prize — most customers stay for one more round when there’s a snack in front of them.
