The format

Date  Time  Fridge#1  Fridge#2  Freezer  Initials  Notes

Twice a day. Same book. Pen, not pencil. If a temperature is out of range, the action you took goes in the notes column. Even if you only adjusted the thermostat.

What an inspector wants to see

Not a perfect log — a consistent one. A 90-day book with daily entries and the occasional documented action shows a venue with food-safety culture. An immaculate spreadsheet that’s been printed today shows a venue with something to hide.
